Methods of Making Hyderabadi Dum Mutton Biryani
Making Hyderabadi mutton biryani isn’t that hard if you follow the good recipe, so in this blog we will focus on the simple methods of making Hyderabadi mutton biryani. So without further delay, let’s get started.
Step 1: Preparation
Ingredients needed for preparation
- Oil
- Onion
- Basmati rice
- Coriander
- Mint
- Saffron
- Food colour
- Cashews
- Kishmish
First of all take kadai, heat the oil and after the oil is perfectly heated add onions and fry until it turns golden brown. Drain the oil completely and then set aside the perfectly fried golden brown onion. Now take a bowl, leave the basmati rice to rinse and soak for an hour. There are other herbs needed to make biryani like coriander and mint, nicely chop them and set aside. Make sure you also have saffron and food colour in milk to soak. Now take some ghee in any pot and fry some cashews and kishmish.
Step 2: Marinating Mutton

- Red chilli powder
- Yogurt
- Lemon
- Biryani masala
- Finger garlic paste
- Turmeric
- Oil
- Salt
Now for marinating Mutton, take a large bowl and add nicely washed mutton on it and add all the marinating ingredients mentioned above, you can now leave mutton to marinate for at least an hour to whole night, if you want to marinate it for whole night then put it in refrigerator. If you left mutton for the whole night to marinate then make sure to take out marinated mutton from the refrigerator at least one hour prior to making biryani to bring it back to room temperature but.
Step 3: Cooking rice for biryani

- Good quality basmati rice
- Oil
- Salt
- Cinnamon
- Cloves
- Saunf
- Cumin seeds
- Cardamom
First of all, bring a large pot to cook rice for biryani, add some oil and fry all the ingredients mentioned above and after the ingredients fry properly add water in it and boil it. After the water boils add salt and also add the basmati rice we have left to soak in our preparation. But make sure you don’t have to cook rice completely, 50% cooked rice is always the best option to make biryani. After the rice is 50% cooked, take the rice out of the pot and also make sure the rice doesn’t assemble.
Step 4: Assembling the biryani
In the above mentioned 3 steps we have almost made biryani but we have not yet assembled our biryani yet. To assemble biryani, first take a large pot, add some oil and add half of our marinated mutton in the pot. After that in the same pot add half of our 50% cooked rice above mutton. Above the rice, add fried onions and again add that half marinated mutton we haven’t added before. Again add all the remaining rice above mutton. Now on the top, sprinkle finely chopped coriander and mint leaves, fried cashews and kishmish and at last pour saffron and coloured milk.
Step 5: How to Dum Cook Biryani
Now it’s time to seal the pot after assembling biryani. Make a dow of sticky atta. Place a cover of a pot and seal it well with that dow. Above the cover of the pot, add any heavier object to seal the cover more nicely or you can also use another pot full of water. Leave the biryani for 45 minutes but under a low flame and after the time is up, remove the cover of the pot, fluff up the rice, mix both rice and mutton together and serve.
