Introduction
Eggs are a boon for humans. They can be used to make a variety of delicious dishes. One of the most famous dishes made from Eggs particularly in South Asia is Egg Curry. It is somewhat regularly cooked in someone’s house. The blend of Eggs, Potatoes with some spices makes it a full packed dish that is very nutritious. It supplies us with enough protein and vitamins. Potato egg curry is easy to go with anything in house like Boiled rice, Cumin rice, Rotis and Bread. It can even be consumed alone. Despite its origin in the Indian subcontinent, it is carving its way across the world’s kitchens. Here, In this article we will dive into the step by step guide that i personally used to make egg curry with potato. Simply follow the steps below and get the fingerlicking dish.
Ingredients Required
Here, We are making potato egg curry for 3 People. So – Assemble the following things to get started:-
- 5 Eggs (2 will be mashed in curry and 3 will be un-mashed in curry)
- 3 Potatoes
- 3 onions
- 4 Tomatoes
- 4 BIg Garlic Cloves
- 1 Medium Sized Ginger
- 2 Green Chillies
- 1 and ½ Spoon Cumin
- Salt
- Turmeric
After assembling all the above mentioned ingredients, we can start the process of making our potato egg curry.
Egg Curry Recipe With Potato
Step 1:
Take a pressure cooker and place 5 eggs, 3 potatoes, 4 tomatoes inside it and let it boil under pressure. Wait until the pressure cooker makes around 7 whistles. This ensures that the potatoes will be soft which makes it easier to make curry later on.
Step 2:
While boiling the eggs, potatoes and tomatoes inside the cooker. We should chop our Onions into small pieces. Similarly, Garlic and Chillies should be chopped and Peel off the ginger skin.
Step 3 :
Now, Take the peeled off ginger and garlic and make a ginger garlic paste.
Step 4:
While doing all these, Our cooker will make seven whistles. Now, Open the cooker and place all the hot ingredients into the normal cold water carefully.
Step 5:
After all the ingredients have cooled down, Peel off the skin of Potatoes, Eggs and Tomatoes. After peeling off the outer layer of eggs, Make small holes around the eggs so that they won’t brust later while boilng.
Step 6:
Mash the peeled Potatoes and Tomatoes together making it a kind of slurry.
Step 7:
Now, Take a deep pan and place seven spoons of oil in it. Allow it to become hot. After that, fry the peeled off eggs into the hot oil until the outer layer of eggs becomes a little red. After that take out the eggs and place them on a plate.
Step 8:
Now, Place our chopped onions and a spoon of cumin in the same hot oil which we previously used to fry our eggs. Allow, The chopped onions to fry and become a little brittle.
Step 9:
It’s time to place the earlier prepared mashed potatoes and tomato mixture. Cook the mixture for about 3 mins by continuously stirring. After 3 mins, add some water such that the mixture gets just covered into the water. Cover it for 2 mins.
Step 10:
Now, It’s time to add all 5 fried eggs into the boiling gravy. Mash the 2 eggs into the gravy which ultimately makes gravy thick and flavoured with eggs. Add ginger garlic paste, salt, turmeric and little water and cover it to boil for about 3 mins.
Step 11:
After 3 mins of boiling, Our Potato egg curry is ready to serve. Give final topping of coriander for better aroma.
How to Eat Potato Egg Curry?
The egg curry can be consumed with rice or rotis or bread or anything you like to eat with. It is much preferred with rice and rotis. You can even keep it refrigerated for around 2 days and consume it later on.
